Chicken with Rocket, Apple and Caramelized Onion Salad

  • 800 grams Chat Potatoes, quartered (skin on)
  • Olive Oil (h)
  • Salt and Pepper (h)
  • 1 bunch Fresh Rocket (arugula),
  • washed and dried
  • 1/2 bunch Lettuce, chopped
  • 1 Green Granny Smith Apple, sliced and
  • cut into sticks
  • Handful Walnuts, toasted
  • 4 Onions, thinly sliced
  • 2 tablespoons Balsamic Vinegar (h)
  • 600 grams Chicken Breasts
  • 1 Lemon, juiced
  • 100 g soft Feta Cheese, crumbled
  • Preheat oven to 225 degrees C.
  • Quarter the potatoes. Put them in an oven proof dish. Drizzle with olive oil and season with salt and pepper. Bake for about 20 minutes, until golden and a bit crisp on the edges. 3. Wash and dry the rocket and lettuce.
  • Slice the apple and cut the slices into sticks.
  • Quickly toast the walnuts – simply toss them around in a dry frying pan for about 3-4 minutes on medium high heat, until golden. Reserve to cool.
  • Thinly slice the onions.
  • Heat 3 1/2 tbsp olive oil in a non-stick frying pan over medium - low heat. Add the onions and a good pinch of salt and cook very slowly for 15-20 minutes, stirring occasionally to prevent them from catching. Don't be tempted to turn the heat up, as you don't want the onions to burn.
  • When onions are softened and tinged dark golden, add balsamic - this will start the caramelization process. Cook onion over low heat for a further 5-10 minutes, stirring occasionally, until sticky and caramelized. Remove from pan and place on a plate to cool.
  • While the onions are caramelizing, cook the chicken. Heat 1 tbsp of olive oil in a non-stick frying pan. Rub the fillets with a little bit of olive oil and season them with salt and pepper. Cook on one side for about 6 minutes, turn them over, cover the pan and cook for another 8-10 minutes until cooked through. Reserve on the plate and let rest for 2 minutes before cutting in strips – it will keep all the juices in.
  • Juice the lemon. Wash, drain and chop the rocket and lettuce.
  • Combine rocket, lettuce, apple, walnuts, caramelized onion and chicken.
  • Drizzle with olive oil, lemon juice and freshly ground pepper to taste.
  • Crumble feta on top and gently toss. Serve with roasted baby potatoes on the side.
